Caprese Salad


I could eat Caprese salad all day every day. It is probably one of the easiest things to make as well. No skill required.


Vine ripened tomatoes
Fresh mozzarella cheese
Fresh basil
Balsamic glaze
Extra virgin olive oil
Salt and pepper


Slices tomatoes about a 1/4 inch thick. Same with your mozzarella. On a plate layer your tomatoes, basil and mozzarella however you want. You can even stack if you like. You can have fun with the tomato selection and get different colored tomatoes like yellow or purple. Farmer’s markets are great for this. Once you have arranged your 3 main ingredients just drizzle with extra virgin olive oil and balsamic glaze. I just bought glaze in a bottle at the grocery store. Sprinkle some salt and pepper on there if you like and you are done!

I serve this as an appetizer before any Italian dish, but usually before my chicken parmigiana.
